Ultimate Vegan Banana Bread

The best dairy free, egg free, simple banana bread recipe

Ingredients
  

  • 1 flax egg 1 Tbsp flaxseed meal + 2 1/2 Tbsp water
  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 bananas very ripe
  • 3/4 cup sugar
  • 1/2 cup carrot shredded
  • 3 tbsp almond milk
  • 3 tbsp vegetable oil or melted coconut oil
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 350°
    Spray two mini loaf pans with nonstick cooking spray, set aside.
    Mix flax egg ingredients together and set aside to thicken. In medium bowl, whisk together flour, baking soda, salt and cinnamon.
    In large bowl, mash bananas with fork or potato masher, then add in sugar, carrots, milk, oil, flax egg, and vanilla, mix well.
    Add flour mixture to banana mixture and stir gently until just combined. Divide evenly into mini loaf pans. Bake for 25 minutes or until firm and toothpick comes out clean.
